LOVE THE 4TH OF JULY DON’T YOU?.......


What do you like best about the 4th? I think the best thing is we all stop to be together, celebrating in a relaxing mode. It’s cooking on the grill, children laughing, playing in the yard running under the sprinkler! The sights and sounds stick in my mind with good memories with each year building on another.


I make my special Potatoe Salad like my mother use to make. My memory is, mother would put the potatoes on to boil, while she made the fresh squeezed lemonade, sweeten to her taste, which would be just right. Daddy would love his assignment of cutting up the pickles, celery, and the bell pepper for her famous salad. He would cut each thing to its finest. His sharpen knife was to perfection. The onion was cut last so it wouldn’t burn his eyes so badly, although he would bite on a wooden match, said it would help but I think I still saw a tear.




Here is our Family Potato Salad Recipe, maybe you can make it and see it become a family tradition…

6 med. potatoes
3 eggs, hard-boiled, sliced
1/2 c. sweet or dill pickles chopped “finely”
1/2 c. finely chopped celery
1/2c. finely chopped bell pepper
1 small jar pimento
1/2 c. Miracle Whip salad dressing
1 tbsp. sugar
2 tablespoons yellow prepared mustard
2 tablespoons catsup
black pepper to taste
(optional...one small chopped onion can be added with all other chopped items if desired)
Boil potatoes in 2 quarts of water with 1/2-tablespoon salt. until tender. Cool, peel and then cube. Add sliced eggs, and all other chopped items. In separate bowl mix well Miracle Whip, mustard, catsup, sugar and pepper. Then gently mix with potatoes. Might need to add a little more if moister salad is desired. Let set in refrigerator to chill before serving (overnight is best).

Love it when the holiday falls on the weekend or on Monday like it is this year. We have all the weekend to have family fun time. We always love it when it gets dark and it’s finally the time…”Fireworks Time”.
